This Broccolini & Blueberry Spinach Salad is my Summer 2017 favorite salad recipe. It’s loaded up with antioxidants, healthy fats and tons of vitamins and minerals.I’m really excited to have the time to work on my blog for the past few weeks. Taking two months off to graduate Flight Attendant training was certainly worth it, but my kitchen has been calling my name since I left. Once you really understand the difference in fresh, local, organic ingredients it is not appetizing to eat at other places that don’t share your values on food production and preparation. By the way, I’m totally not offended if you think I’m a food snob. You aren’t the first, and I’m sure you won’t be the last. 😉
During flight attendant training my classmates would pass around value-sized bags of gummy bears and other processed candies. When the bag got around to me I would start reading the ingredients out loud. 90% of the ingredients I couldn’t even pronounce because they were chemicals made to preserve the candy for years to come…I would pass the bag off and my classmates couldn’t understand why I wasn’t stuffing my face with sugar infused chemical by-products. My answer was the same every single time…
“If I can’t pronounce it, I don’t eat it.”

3 Ingredient Honey Mustard Dressing

- 5 cups of fresh baby spinach
- 1 hass avocado
- 1 cup of fresh blueberries
- 1/2 cup of dried cranberries
- 1/4 pine nuts or pumpkin seeds
- 1/2 cup feta cheese crumbles
- 1 1/2 cups fresh chopped broccolini
- Combine all ingrediens in a salad bowl and toss.
- Top with a fresh berry vinaigrette or my 3 ingredient honey mustard dressing recipe.
